NO BAKE - Key Lime Cheesecakes

I don't know about you but the thought of turning on my oven on a hot and humid day causes a mini panic in me. So what is one to do when you need to bring a tasty dessert to a picnic? Go NO BAKE! These little lovelies are easy enough for kids to make, just a few ingredients:
Key Lime Cheesecake Mix from Homemade Gourmet (I bought it at Dollar Tree)
8 oz cream cheese, room temp
8 oz whipped topping, thawed
1 cup graham cracker crumbs
5 tablespoons butter, melted
1 tablespoon sugar in the raw
zest of one lime (optional) 

Enticingly Easy brand of Key Lime Cheesecake Mix

Mix room temp cream cheese with key lime cheesecake mix till thoroughly combined, I added the lime zest and a few drops of green gel food coloring then fold in the whipped topping. Once evenly combined, In a separate bowl, melt 5 tbsp. butter and combine with graham cracker crumbs, sugar and zest (optional).
 I spooned the crust mix into mini pie tins, using an ice cream scoop popped one in each and flattened with the back of a spoon. Anyone notice the photo bomber in the background?
Topped off each little beauty with a quarter of a lime slice that was dipped in sugar in the raw. Refrigerate to let them setup and serve cool. All that's left is to ENJOY! Finger licking is allowed.

  1. I purchased this at the dollar tree and tried the key lime cheesecake pie recipe on the back of the box. It was a hit and the easiest 'no bake' recipe ever!!! I love this product and currently looking to purchase and stock up on it to keep in my pantry. C. Baker (California)
