Key Lime Cookie Sandwiches

Paulie was craving Key Lime and the little bugger apparently had a plan all along so since we had leftovers tonight I caved into his desire for sweets. 

TIP: If you have more than one sheep pan's worth of cookies to bake, while the first batch is on the cooling rack I speed cool the sheet pan by flipping it over and running cold water over it. Seconds later you are ready for another batch for the oven. The reason you don't want to use a hot pan is these are butter based and would start to spread prematurely and create a thin wide crist instead of the little domes for the sandwiches. 
Cooled cookies were hit with a scoopful of frosting, no it's not from scratch and I use the same scoop for portioning out the cookies and the frosting application (who wants to wash half you gadgets drawer for some cookies? lol). 
Pillsbury cookie mix and frosting but you can turn most box cake mix into cookies with a stick of room temp butter and 1 egg. I've made Red Velvet cookies before using this concept. If there are any leftovers, they can be wrapped well in plastic and popped in the freezer for an anytime treat.
