Meatless Monday dinner was Silver Dollar Pancakes with Organic Blueberry Sauce, if you missed my vlog here is a link: Breakfast for Dinner
It had tri-colored pasta, couple of cans of crab meat (nothing fancy, this was just for flavor), black olives, water chestnuts, celery, scallions, parsley, dill, lemon zest, lemon juice, black pepper, salt and mayo
The water chestnuts were a perfect crunchy addition, I love having these little textural wonders in the pantry!
Paulie had his with Maple Syrup but I enjoyed mine dripping with the whole berries, practically licked the plate. I made these in under 10 minutes, using a basic box mix that only needs water (no eggs or milk) and can be made vegan if you eliminate the butter I used and swap it out for coconut oil instead. The tip/trick is to use a squeeze bottle with a slightly larger tip opening to precisely place the batter on the griddle without a mess.
One of the days Paulie was working late so I made Crab Pasta Salad, which can be eaten at any time.
