10 Minute Dinner - Shrimp & Scallop Scampi

Peeled and deveined shrimp along with scallops baked with a drizzle of olive oil, salt & black pepper for 6-8 minutes at 400° F while Angel hair pasta boils. Scampi - 2 tbsp unsalted butter, zest & juice of 1 lemon, 3 garlic cloves microplaned, 1/4 cup chopped fresh parsley, pinch of red pepper flakes, salt & black pepper. Drain pasta, add scampi sauce, place shrimp & scallops over pasta. Finish with Black Hawaiian Sea Salt and squeeze of lemon.

  2. Pam, luckily the shrimp can be swapped out for your favorite fish or even lobster pieces. This is my version of 'fast food'.
