Meatless Monday - Veggie Soup

I wanted to make something hearty to warm you up from the inside, especially for Paulie who spends his entire work day outside in the freezing cold (high of 23° F today).  The video below shows the steps and my loose 'recipe'.

    I haven't seen the video yet Natasha but your soup looks delicious! Good thing Paulie has this soup to come home to! Hopefully I'll watch the vid tomorrow. 😊

      Hi Christina, the soup was a welcome meal although at 11:30 pm for Paulie when he got home from work. I had the leftovers today for lunch with an addition of some hot sauce which makes it more Asian in flavor.
