Healthy Lunch


Leftover baked potato from last night was the perfect foil for today's lunch - split open and toasted in my pan cut side down to crisp up the insides.  While that was on the stove, I popped out to the garden to grab a fresh tomato and cucumber which needed nothing else besides salt and black pepper.  An annoying day paused, at least long enough to enjoy my yummy lunch break.
