Breakfast - Duck Eggs & English Muffin

I started the day off with a hearty but healthy breakfast - 2 duck eggs sunny side up, a perfectly toasted English muffin and a tablespoon of salsa.  My favorite way to flavor is sea salt, black pepper, lemon zest and lemon juice and a sprinkling of cheese (just one tablespoon).
My secret to perfectly toasted muffins - broiler - I add butter and place the muffins on a 1/4 sheet pan under the broiler.  Don't walk away, it only takes a few minutes and can go from perfect to charcoal in a split second.  Once out of the oven I sprinkle a little shredded cheese on one for additional flavor.
