Leek & Potato Soup

Recipe:

I tend to be very casual when cooking so I rarely actually use a recipe but this is an approximation of what was used today
  • 3 half inch thick slices of Turkey Ham, diced and fried in the bottom of the dutch oven
  • 3 Large Leeks, white portion only - sliced, soaked in a large bowl of cold water to get rid of all the grit
  • 5 medium potatoes - peeled and diced
  • 1 quart of your preferred broth/stock - I used low sodium chicken broth
  • 2-3 tablespoons of chopped parsley
  • Salt, Black Pepper and a Dash of Hot Sauce to taste
  • 2 tablespoons of Fat Free Sour Cream but you can use Cream or Milk
Video shows the step by step.  I served the soup in big coffee mugs with a squeeze of lime and a drizzle of extra virgin olive oil.
