I made this GIANT and very satisfying salad for today's lunch:
Salad:

- Romaine, Red Leaf & Iceberg lettuce
- Plum cherry tomatoes, cut in half
- Pickling Cucumbers
- Red Peppers
- Red Onion
- Dill
- Craizins
- Summer Sausage - 3 slices cubed
- Home made fat free Buttermilk Ranch dressing
Dressing:
- 2 scallions, white and green parts, chopped
- 1/4 cup chopped fresh basil leaves, lightly packed
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoons Dijon mustard
- 1 garlic clove, chopped or processed on a microplane
- 1 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup Greek-style yogurt, fat free
- 1/2 cup fat free buttermilk, shaken
