Wild Caught Alaskan Sockeye Salmon
Just under $9 for this large size Salmon - two portions is just $4.50 which is practically the same price as a Fish Sandwich from fast food but so much more flavorful and better for you.
I start by patting down the fish to insure a crispy skin. Heat the pan, one pat of butter then place the salt and peppered skin side down for 4-5 minutes (depending on thickness), flip and turn off the heat but leave it in the pan on the stove. This cooks it through perfectly without drying out. In addition to the Salmon, I usually add a lemon with the cut side down to caramelize it. It's a nice addition and the juices flow freely when it's heated.
Long Grain Brown Rice
I cooked 1 cup of rice to 1 3/4 cups of stock with salt & black pepper for 40 minutes, covered. Then uncover, flake with a fork and add a pat of butter, mushrooms and tablespoon of dill. I finish it off with a squeeze of lemon.
Green Beans
The easiest beans ever - flash frozen steam package - 3 minutes in the microwave, salt, black pepper and slices of roasted red pepper complete this side dish.
